Grandma's Olive Oil Cookies

Biscoitos de azeite - How to do it!
This week we have a surprising and delicious recipe for you: olive oil cookies! Find out how to make these, just like my grandmother used to bake them for me.
Ingredients
- 4 eggs
- 250 g sugar
- 500 g flour
- 120 ml Sardia Olive Oil
- 1 tsp cinnamon
Preparation
- Preheat the oven to 180°C and line a baking sheet with baking paper.
- Mix the sugar with 2 whole eggs and 2 egg yolks until creamy (save the egg whites).
- Add the olive oil and stir well.
- Mix in the flour and cinnamon until a firm dough forms. It is easier to use your hands. Add additional flour or olive oil if necessary.
- Form cookies as desired, such as figurines or flattened balls, and brush with egg white.
- Bake for about 15 minutes.
- Remove from the oven and allow to cool.
Tip: Delicious with a cup of tea or coffee with whipped cream! ☕🍪
